Bún bò Huế comes from Huế in central Vietnam. The broth is red with chili and fragrant with lemongrass, and the noodles are thick, round rice noodles.

It is spicier and heartier than phở. It comes with fresh herbs, shredded cabbage, lime and jalapeño on the side.
